Creamy Coconut Banana

Short post for today – a quickie dessert recipe. I like this one because it’s free of all the nasties that are typically found in sweet treats: gluten, dairy, and sugar. Plus, it’s so simple to whip together and you can customize it to your liking!

First things first: go out and get yourself some coconut butter. Trust me, you’ll be happy you did. I can eat this stuff right out of the jar. It’s a healthy fat with a delectably sweet taste and in my books, that’s all kinds of awesome.

Before I get to the recipe, please note that this yields two small servings. If you’re making it just for yourself, I recommend using one banana, not two, to avoid a sugar overload.

Here’s What You Need:
2 really ripe bananas
2 tbsp coconut butter
1/2 tsp vanilla extract
Sprinkling of cinnamon
Pinch of salt
Toppings of choice: perhaps a few walnuts or cashews, a few raspberries, a sprinkling of unsweetened shredded coconut, or a sprinkling of hemp hearts or cacao nibs

Here’s What You Do:
In a small saucepan, mash bananas. Add the remaining ingredients and stir well. Heat over low heat until warmed to your liking (or skip this step and simply serve at room temp). Spoon into two small bowls and add desired toppings.
