I love soft, chewy cookies. So when I tried these at a potluck last week and realized I had all the ingredients at home already, I knew I was going to make them that very night.  That’s the most awesome thing about potluck gatherings: new recipes and new inspiration.

These are called Apple-Spice Tea Cookies and come from the Autoimmune Paleo Cookbook. Do yourself a favour and pick up the book so you can make these cookies today!

What I love about these cookies, besides the fact that they’re so easy to make, is that the sweetness comes from fruit (dates and apples) – no sugar needed. There’s also no need to worry about gluten here; these babies don’t contain any grains, period. We’re doing ourselves a huge favour by taking a break from the norms: gluten, sugar, dairy, refined oils. Consider this recipe for your upcoming holiday parties! Enjoy.
